  • 6 bone-in, skin-on chicken thighs (about 3 pounds / 1.4 kg)
  • 1/2 cup (120 ml) honey
  • 1/3 cup (80 ml) low-sodium soy sauce
  • 2 tablespoons (30 ml) rice vinegar
  • 3 garlic cloves, minced
  • 1 tablespoon (15 ml) freshly grated ginger
  • 1 teaspoon (5 ml) sesame oil
  • Pinch of red pepper flakes (optional)
  • 1/4 cup (60 ml) water or chicken broth
  • 2 cups (360 g) jasmine rice
  • 2 1/2 cups (600 ml) water for rice

Instructions

  1. Pat dry the chicken thighs with paper towels to help crisp the skin and allow the sauce to cling better.
  2. In a mixing bowl, whisk together honey, soy sauce, rice vinegar, minced garlic, grated ginger, sesame oil, and red pepper flakes if using.
  3. Place the chicken thighs skin side down into the slow cooker crock.
  4. Pour the honey garlic sauce evenly over the chicken, coating each piece well.
  5. Pour water or chicken broth around the edges of the slow cooker to keep the chicken moist.
  6. Cover and cook on low for 5-6 hours or on high for 3-4 hours until the chicken is tender and easily pulls apart with a fork. Optionally, turn the chicken halfway through cooking for even coating.
  7. About 20 minutes before the chicken is done, rinse the jasmine rice under cold water until clear.
  8. Cook the jasmine rice according to package instructions or in a rice cooker using 2 1/2 cups water.
  9. Fluff the cooked rice with a fork.
  10. Carefully remove the chicken thighs from the slow cooker and place them over the jasmine rice.
  11. Spoon some of the sticky honey garlic sauce from the slow cooker over the chicken and rice.
  12. Optionally, garnish with chopped green onions or sesame seeds for color and crunch.

Notes

Patting the chicken dry improves skin texture and sauce adhesion. Turning chicken halfway through cooking is optional but helps even coating. If sauce is too thin after cooking, remove chicken and simmer sauce on stovetop to thicken or add a cornstarch slurry. Timing rice to finish as chicken cooks keeps meal warm. For gluten-free, substitute soy sauce with tamari or coconut aminos. Maple syrup can replace honey but alters flavor slightly.
