  • 1 cup (200 grams) light brown sugar, packed
  • ½ cup (100 grams) granulated sugar
  • 2 large eggs, at room temperature
  • 2 teaspoons vanilla extract
  • 2 ½ cups (312 grams) all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon fine sea salt
  • 2 cups (340 grams) semi-sweet chocolate chips
  • ¼ cup white candy melts (for laces)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9-inch round cake pan with parchment paper, leaving some overhang on two sides for easy lifting. Lightly grease the parchment with butter or non-stick spray.
  2. In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar together on medium speed for 3 to 4 minutes until light, fluffy, and pale in color. Scrape down the sides of the bowl once during mixing.
  3. Beat in the eggs one at a time, mixing well after each addition. Then add the vanilla extract and mix until combined. The mixture should look smooth and glossy.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the flour mixture to the butter mixture, mixing on low speed. Stop as soon as the flour disappears. The dough should be thick, slightly sticky, and hold together when pressed.
  6. Use a rubber spatula to fold in the chocolate chips by hand until evenly distributed.
  7. Transfer the dough to the prepared cake pan. Use your hands or a spatula to press it into an even layer, all the way to the edges.
  8. Bake for 28 to 32 minutes, until the edges are golden brown and the center looks set but still soft. A toothpick inserted in the center should come out with a few moist crumbs, not wet batter.
  9. Let the cookie cake cool completely in the pan on a wire rack for at least 1 hour.
  10. Once completely cool, lift the cookie cake out of the pan using the parchment overhang. Place it on a cutting board.
  11. Using a sharp knife or bench scraper, trim the round cookie cake into a football shape: cut off the top and bottom edges to create two flat sides, then carefully round the remaining four corners to create the tapered ends of a football.
  12. Melt the white candy melts according to package instructions. Transfer to a piping bag or zip-top bag with a tiny corner snipped off. Draw a long straight line down the center of the football, then add short perpendicular lines on each side to mimic laces. Let the icing set for 10 to 15 minutes before serving.

Notes

Let the cookie cake cool completely before shaping to avoid crumbling. For cleaner cuts, refrigerate for 15 minutes before trimming. Save trimmed pieces for snacking or crumbling over ice cream.
