These no-bake Frankenstein Rice Krispie Treats are a fun and spooky Halloween dessert that kids can help make. With green food coloring, candy eyes, and a stitched-up mouth, they’re as adorable as they are delicious.

  • 3 tablespoons unsalted butter
  • 10 ounces mini marshmallows (about 6 cups)
  • 6 cups crispy rice cereal
  • 1 teaspoon green gel food coloring
  • 24 candy eyes
  • 1 tube black decorating frosting
  • Vegetable oil or non-stick spray (for greasing)

Instructions

  1. Line a 9×13-inch baking pan with parchment paper, leaving about 2 inches of overhang on the long sides. Lightly spray the parchment with non-stick spray.
  2. Place a large pot over medium-low heat. Add the unsalted butter and melt completely.
  3. Add the mini marshmallows and stir constantly until completely melted and smooth, about 3-4 minutes.
  4. Remove the pot from the heat. Add the green gel food coloring and stir until evenly distributed.
  5. Pour in the crispy rice cereal and fold gently until every piece is coated, about 2 minutes.
  6. Scrape the mixture into the prepared pan. Lightly wet your hands or a spatula with water (or spray with non-stick spray) and gently press the mixture into an even layer. Do not press too hard.
  7. Let the treats cool and set at room temperature for about 30 minutes.
  8. Use the parchment paper to lift the block of treats out of the pan. Place on a cutting board and cut into 12 rectangles (about 3×4 inches each).
  9. For each rectangle, press two candy eyes into the top half. Use the black decorating frosting to draw a small mouth below the eyes and a zigzag stitch pattern on the forehead.

Notes

Work quickly when the mixture is warm as it sets fast. If it gets too stiff before pressing, microwave for 10 seconds to soften. For best texture, enjoy within 24 hours. Store in an airtight container at room temperature for up to 3 days. Do not refrigerate.
