A quick, no-chill chocolate chip cookie recipe that comes together in under 15 minutes. These cookies feature crispy edges, a soft chewy center, and require simple pantry ingredients.

  • 1/2 cup (1 stick or 113g) unsalted butter, softened
  • 1/2 cup (100g) granulated white sugar
  • 1/2 cup (100g) light brown sugar, packed
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 1/2 cups (190g) all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup (170g) semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, combine softened butter, granulated sugar, and brown sugar. Mix vigorously for 2-3 minutes until pale and creamy.
  3. Add the egg and vanilla extract to the butter mixture. Mix until just combined, scraping down the sides of the bowl.
  4. In a separate small bowl, whisk together flour, baking soda, and salt.
  5. Add dry ingredients to wet ingredients and stir gently until flour disappears.
  6. Fold in chocolate chips using a spatula until evenly distributed.
  7. Scoop tablespoon-sized portions of dough onto prepared baking sheets, spacing them 2 inches apart.
  8. Bake for 9-11 minutes, until edges are golden brown but centers look slightly underbaked.
  9. Remove from oven and let cool on the baking sheet for 5 minutes.
  10. Transfer cookies to a wire rack to cool completely.

Notes

Ensure butter is softened but not melted. Use room temperature eggs to prevent grainy texture. Do not overmix the dough once flour is added to avoid tough cookies. Cookies continue to cook on the hot pan after removal from the oven.
