Instructions

  1. Prep the Pumpkin: Measure out ½ cup of pumpkin puree. Place it on a plate lined with paper towels, spread into a thin layer, and press with another paper towel to absorb excess liquid. Let sit for 5 minutes.
  2. Whisk Dry Ingredients: In a medium bowl, whisk together flour, cornstarch, cream of tartar, baking soda, salt, cinnamon, ginger, nutmeg, and cloves. Set aside.
  3. Cream Butter and Sugars: In a large bowl, beat softened butter, brown sugar, and granulated sugar on medium speed for 2-3 minutes until light and fluffy. Scrape down the bowl.
  4. Add Wet Ingredients: Beat in egg and vanilla extract until combined. Add blotted pumpkin puree and beat on low until just incorporated.
