  • 1/3 cup (75g) unsalted butter, melted
  • 3/4 cup (150g) granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 1/2 cups (190g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 3/4 cup walnuts, roughly chopped

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×5 inch loaf pan with parchment paper.
  2. Mash the ripe bananas in a large mixing bowl until mostly smooth with a few small lumps.
  3. Add the melted butter, sugar, eggs, and vanilla extract to the bananas. Whisk vigorously for about a minute until glossy and uniform.
  4. Sprinkle the flour, baking soda, salt, and cinnamon over the wet mixture. Gently fold in with a spatula or fork until just combined; do not overmix.
  5. Fold in the chopped walnuts, reserving a small handful for topping.
  6. Pour batter into the prepared pan, smooth the top, and sprinkle reserved walnuts on top.
  7. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean. Tent with foil if browning too quickly.
  8. Cool in the pan for 10 minutes, then transfer to a cooling rack to cool completely before slicing.

Notes

Use very ripe bananas with brown spots for maximum sweetness and moisture. Do not overmix the batter to avoid a dense texture. Toasting walnuts before adding enhances their flavor. The bread keeps well at room temperature for 3 days or frozen for 3 months.
